Ep. 61 - On Hospitality with our Plus One, Kathy

Hey everyone! What a great episode we have for you today! We have brought in a “plus one” for you, too, and we are so excited for you to meet our sweet friend, Kathy. She is one of our dear friends and we love her and her kiddos, Sarah Kate and Hampton (cutest names!). We are also big fans of her husband, Jeff, who is the pastor of our church. Welcome to the table, Kathy! We so loved chatting with her and learning from her and we know you will, too. The holiday season always seems to bring with it the potential for having more people in your home. So today we are talking about hospitality! Sounds scary, maybe, but if you listen, you’ll hear that it’s not really tablescaping that we’re talking about. 😉 Both Courtney and Kathy have recently read Rosaria Butterfield’s The Gospel Comes with a House Key, and it has changed the way they see hospitality. (It’s definitely on Jennifer’s nightstand stack of books to read!) We talk about this book some, but also how hospitality has evolved for us over the years and what it means to us now. We’d love to hear from you if you’ve read this book before!

Jennifer mentioned these “back of the house” towels that she uses as napkins (saw them at restaurants and then at Kathy’s house, too!).

We promised you a few easy recipes, too. Here are two of Courtney’s easy recipes: Smitten Kitchen’s Tomato Sauce (SUPER EASY!) and Lidia’s Meatballs. One of Jennifer’s favorite recipes she doesn’t have a link to (literally in her head), so here it is:

Asian Chicken Pasta Salad (this is the best thing ever, not kidding):


1/3 cup red wine vinegar

1/3 cup soy sauce

1/4 cup olive oil

2 tablespoons sugar

1/4 teaspoon salt

1/8 teaspoon pepper

Mix all together.

Brown 1/4 cup sesame seeds in 1/4 olive oil and pour into dressing once cooled a bit.

Pour over a box of cooked tri-color rotini pasta. Mix in grilled chicken and cut up (or not) spinach leaves.

This recipe is so easy, you guys. Jennifer has Nathan grill a bunch of chicken and then freezes it. She can take some out and whip this up in two seconds. It’s the easiest thing, tastes amazing, and. has. spinach., so you feel good about it. And it tastes so good the next day after being chilled in the fridge. Hot or cold!
